When food is cooked at commercial scale, heat and vapour rise into the kitchen exhaust system. Filters capture part of that load, but the system continues beyond the hood. Fine grease aerosols and residue can travel into the plenum and downstream ductwork before the air reaches the final discharge point.

The duct is part of the exhaust system

From a maintenance perspective, hood, plenum, duct and fan should be understood as one route. Cleaning only the visible section can leave the hidden system undocumented.
