A facility-focused explanation of how cooking vapour carries grease into hidden exhaust ductwork.
When food is cooked at commercial scale, heat and vapour rise into the kitchen exhaust system. Filters capture part of that load, but the system continues beyond the hood. Fine grease aerosols and residue can travel into the plenum and downstream ductwork before the air reaches the final discharge point.
The duct is part of the exhaust system
From a maintenance perspective, hood, plenum, duct and fan should be understood as one route. Cleaning only the visible section can leave the hidden system undocumented.
Geometry influences deposits
Changes in direction, joints, horizontal runs and areas of reduced access can accumulate residue differently. That makes inspection important before a cleaning plan is finalised.
Operating conditions differ
